Fiesta Ranch Chicken Salad

1 boneless chicken breast

1/2 teaspoon Seasoning for Tacos
4 ounces lettuce, torn up
Few thin slices cucumber
1 ounce Monterey jack cheese, shredded
1/4 cup salsa
1/4 cup ranch dressing

Sprinkle the chicken with the taco seasoning on both sides. Grill until just done; cut into thin slices. Toss all of the ingredients to mix well. Garnish with chopped cilantro, if desired.

Makes 2 servings
