LowCarb Pancakes


Pancakes are good now and then, this variant is a little more figure friendly and really good with cream and berries !

What you need: (2-3 servings)

3 eggs 
2 cups coconut flour
1 1/2 cup heavy cream 
1 ½ tablespoons sukrin (or other sweetener)

So do this:

Mix coconut flakes until it becomes flour. Whisk together flour, cocoa, cream, eggs, sugar and salt. Let swell for a while (5-10 minutes). Fry thin, pretty small pancakes in butter (or coconut butter) in a skillet. Serve with whipped cream and berries.
